The Conilon
Especial award will give an honor for coffees in the Espirito Santo Estate. There
are two categories: naturals and pulped natural.
Naturals
are coffee dried in the cherry and in the pulped natural coffee the process
consists in to take the pulp out and then dry it without wash the coffee. The
reason for do not washing the coffee is due to the level of sugar in Conilon be
lower than in Arabica. Therefore, we want to maintain highest level of sugar
into the beans.
